In the Kitchen With Harry Hamlin: Get The Vegan Risotto Recipe from Episode 4

Harry Hamlin is full of surprises, both on screen as Cortland Mayfair in Mayfair Witches and in the kitchen! In this episode of In the Kitchen With Harry Hamlin, Harry shares his delicious vegan mushroom risotto recipe, featuring an unlikely spice pairing: saffron and Herbs de Provence! Harry and his niece, professional chef Renee Guilbault, team up to cook this unconventional “Clash of the Spices” risotto for special guest Ed Begley Jr. Cook along with Harry and Renee with the recipe below.  
Harry’s Vegan Mushroom “Clash of the Spices” Risotto 
5 tbsp, extra virgin olive oil 
2 cups, arborio rice 
2 shallots, tiny dice 
4 cloves, garlic, tiny dice 
3 cups, mix of diced mushrooms (i.e. cremini, shitake, portobello, etc.) 
1 tbsp, Herbes de Provence spice blend 
½ tsp, saffron (mixed with a touch of warm water) 
5 ½ - 6 cups, warmed vegetable stock 
1 cup white wine (Dry) 
Flaky sea salt 
Fresh black pepper 
*Additional olive oil to taste for creamy texture 

Rinse the rice well and set aside to drain. 
In a sauté pan, warm up 3 tbsp olive oil with diced shallots and sweat until translucent. 
Add the mushroom mix until cooked through. Finish with the diced garlic and sauté just until fragrant. Take off heat and set aside. 
In a separate pot, add 2 Tbsp Olive Oil with the arborio rice, stir gently, and lightly toast for 30 seconds. 
Once the rice is toasted, add the white wine and gently simmer until it is 90% evaporated (absorbed by the rice). 
Season with Herbes de Provence and saffron. 
Continue to add small amounts of vegetable stock with a ladle and gently stir until absorbed. Repeat until rice is swollen and almost cooked through (al dente). 
Once risotto is al dente, add sauteed mushrooms and mix to incorporate. Stop here if not serving immediately and hold on stove for up to 2 hours and then reheat and follow additional instructions below. 
Finish with chopped Italian parsley and add flaky sea salt and pepper to taste. 
Serve immediately.
