Bottomless Brunch at Colman’s: Refresh With a Johnnie Walker Spritz Watermelon Smash

When it comes to whiskey, refreshing isn’t always the word that comes to mind. But in this cocktail, whipped up by Colman Domingo on the latest episode of Bottomless Brunch at Colman’s, he’s mixing in watermelon, basil simple syrup and chilled club soda for a refreshing cocktail we never knew was possible.

Since basil simple syrup isn’t something that most of us usually have on hand, we’re including a recipe for that too. If you already have this made, hats off to you! Feel free to jump ahead.

To make basil simple syrup:

1 cup of fresh basil
1 cup of water
1 cup of sugar

Bring all the ingredients except the basil to over medium heat, stir until the sugar dissolves. Let simmer add the basil and infuse to taste. Cool and store for 1 hour. Strain syrup through a sieve into a bowl, pressing hard on the basil and then discard the solids.)

Cocktail Ingredients

  • 1.5 oz Johnnie Walker Black Label
  • 0.5 oz basil simple syrup (recipe to make the syrup is above)
  • 3 watermelon cubes
  • 1 lemon wedge
  • 2 oz chilled club soda
  • Watermelon triangle and sprig of basil, for garnish

Cocktail Recipe

Step 1: Into a shaker, muddle the watermelon with the lemon wedge and the basil simple syrup.

Step 2: Add the Johnnie Walker Black Label and ice.

Step 3: Shake it for 8 to 10 seconds.

Step 4: Open the shaker and add the chilled club soda and strain into a highball glass.

Step 5: Garnish with a watermelon triangle and a basil sprig.

If you’re not a drinker, skip adding the whiskey in Step 2 and you’ll have an equally refreshing mocktail on your hands. Enjoy!
